February Resolution 2022: HEALTHY FESTHUNDIN’ BLUEBERRY CHIA PUDDIN’

Are you getting a slow start on that New Year’s resolution to get healthy? Well, fear not! February is here and it’s not too late to get a jump start on those goals and make up for those January indulgences!

Why add chia seeds to your diet? Chia seeds are highly nutritious! According to nutritionists, just one serving has protein, fiber, tons of antioxidants, potassium, iron, calcium and more omega-3 fatty acids than a serving of salmon! So they’re good for your body, your bones, and your brain -- and these are only a few of the reasons to eat chia seeds!

With all these benefits and more – let’s see how you can add chia seeds into your day!

These little seeds puff up because they soak up more than ten times their weight in water --- making any liquid you put them in thicker and more nutritious! Add a tablespoon of chia seeds into your yogurt or juice - or even better, try our Healthy Festhundin’ Blueberry Chia Puddin’!

This refreshing treat will satisfy a sweet tooth and leave you feeling full – while packing in oh - so - many beneficial nutrients – it’s easy to make and only has a few ingredients!

HEALTHY FESTHUNDIN’ BLUEBERRY CHIA PUDDIN’ RECIPE:

INGREDIENTS:

- 1/3 cup almond milk or milk of choice
- 1/3 cup frozen blueberries
- 1 - 2 Tablespoons of Chia Seeds
- 1 teaspoon - 1 tablespoon liquid sweetener – depending on how sweet you like it – Walden Farms Sugar Free Blueberry Syrup adds a nice sweetness – zero calories but packed with flavor – or try honey, agave, or maple syrup, such as Cary’s Sugar Free Maple Syrup
- (optional) ½ teaspoon – 1 teaspoon vanilla extract or flavoring

DIRECTIONS:

1. Blend almond milk and frozen blueberries a few seconds – NutriBullet works great for this and is easy to clean up. Don’t have a NutriBullet? Just mash the blueberries with a fork until the almond milk turns the color of blueberries
2. Stir in 2 tbsp of chia seeds and 1 tbsp of blueberry syrup or other sweetener and (optional) vanilla
3. Wait a few minutes and stir again – option to stir in a few extra whole blueberries
4. Refrigerate a few hours or overnight to thicken – however – no one says you can’t just eat them right away - the chia seeds will just be a little crunchy!*

*Note: If you don’t like the texture of chia seeds soaked or before soaking, try blending the ingredients and following the same instructions to get a smoother consistency and still get the chia seed benefits!

Don’t have blueberries on hand? Then try making Basic Chia Pudding and add in some of these other options:

BASIC CHIA PUDDING RECIPE:

INGREDIENTS:

1/3 cup – ½ cup – almond milk or milk of choice
1 - 2 Tablespoons of Chia Seeds
1 teaspoon - 1 tablespoon liquid sweetener such as maple syrup, honey, jam, or agave
(optional) ½ teaspoon – 1 teaspoon vanilla extract or other flavoring

DIRECTIONS:

1. Stir sweetener and chia seeds into almond milk (can also add vanilla here)
2. Wait a few minutes and stir again
3. Refrigerate a few hours or overnight to thicken

Try it plain or top with:

Banana
Cinnamon
Raisins
Frozen or fresh berries

It's that easy! Have it cold right out of the fridge as a snack or dessert - you can even warm it up a few seconds in the microwave to make a warm breakfast … have it as is - or add in some healthy toppings - the possibilities are endless!
