FESTHUND-DELICOUS HEALTHIER BANANAS FOSTER

Bananas Foster is a sweet treat that was invented in 1951 by Chef Paul Blange at a restaurant named Brennan’s Restaurant in New Orleans. The restaurant owner, Owen Brennan, wanted to promote this popular fruit and chose to name the dessert after his friend and the chairman of the New Orleans Crime Commission, Richard Foster.

Traditionally, Bananas Foster is made by cooking lengthwise-sliced bananas in butter, brown sugar, and rum and flambeeing – or lighting - the contents of the pan on fire, creating a caramelized rum-based sauce. This was often done tableside to impress the patrons before it was served over vanilla ice cream.

Although the traditional version is delicious for a special occasion, it is high in fat and calories because it is smothered in butter and brown sugar and then served over ice cream. So, our “healthy” take on this traditional dessert is a lighter, slightly modified version… with all the flavor - and a lot less fat and calories!

FESTHUND-DELICOUS HEALTHIER BANANAS FOSTER RECIPE:

INGREDIENTS:
- makes one serving

Pat of butter, cooking spray, or butter substitute of choice
2/3 of a banana (the remaining 1/3 will be used in the “sauce”)
1 teaspoon of brown sugar

“Sauce” Ingredients (see below)


DIRECTIONS:

1. Slice the larger portion of the banana in half and lengthwise, so that you have 4 long portions
2. Heat a skillet on medium to medium-high heat
3. Put a pat of butter, spray, or butter substitute in the pan
4. Place the bananas seed side down in the pan and cook until they are browned
5. Once browned, flip each portion over and sprinkle brown sugar on top
6. Cook until the other side is browned
7. Flip a few times until both sides of each portion are browned and the brown sugar has caramelized
8. Make the “Sauce”

“SAUCE” INGREDIENTS:

1/3 of a banana - mashed
1 teaspoon of Cary’s Sugar Free Maple Syrup, Walden Farms Sugar Free Caramel Syrup, or syrup of your choice
½ teaspoon of vanilla extract

“SAUCE DIRECTIONS”:

1. Mash up the banana
2. Combine the mashed banana with the syrup and vanilla to form a sauce like topping
3. Pour the “sauce” over the browned caramelized bananas

This can be served alone, over Greek yogurt in place of ice cream -- or try it on top of our FESTHUND-TASTIC FLOURLESS BANANA PANCAKES!!!
